  • 4 pieces chicken thighs Skin-on, bone-in for best flavor
  • 1 tablespoon olive oil For searing
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika

  • 1 cup chicken broth Low-sodium recommended
  • 1 tablespoon lemon juice Freshly squeezed for best flavor

Method
 

Preparation
  1. Season the chicken thighs with garlic powder, onion powder, paprika, salt, and pepper.
  2. Turn on the Instant Pot and select 'Sauté' mode. Add the olive oil to the pot once it heats up.
  3. Carefully add the seasoned chicken thighs skin-side down and sear for about 4 to 5 minutes until golden brown.
  4. Flip the thighs and sear the other side for an additional 2 to 3 minutes, then remove the chicken from the pot.
  5. Pour in the chicken broth and lemon juice, scraping the bottom of the pot to deglaze.
  6. Return the seared chicken thighs to the pot, placing them back into the broth.
  7. Close the lid and set the valve to sealing. Choose 'Manual' or 'Pressure Cook' mode, then set the timer for 10 minutes on high pressure.
  8. After cooking, allow for 5 minutes of natural release, then perform a quick release for the remaining pressure.
  9. Carefully open the lid, remove the chicken thighs, and serve with the flavorful broth.

Notes

For extra flavor, marinate the chicken overnight. You can also add vegetables for a one-pot meal and adjust spices for different flavor profiles.
