Preparation
- Season the chicken thighs with garlic powder, onion powder, paprika, salt, and pepper.
- Turn on the Instant Pot and select 'Sauté' mode. Add the olive oil to the pot once it heats up.
- Carefully add the seasoned chicken thighs skin-side down and sear for about 4 to 5 minutes until golden brown.
- Flip the thighs and sear the other side for an additional 2 to 3 minutes, then remove the chicken from the pot.
- Pour in the chicken broth and lemon juice, scraping the bottom of the pot to deglaze.
- Return the seared chicken thighs to the pot, placing them back into the broth.
- Close the lid and set the valve to sealing. Choose 'Manual' or 'Pressure Cook' mode, then set the timer for 10 minutes on high pressure.
- After cooking, allow for 5 minutes of natural release, then perform a quick release for the remaining pressure.
- Carefully open the lid, remove the chicken thighs, and serve with the flavorful broth.
Notes
For extra flavor, marinate the chicken overnight. You can also add vegetables for a one-pot meal and adjust spices for different flavor profiles.
