  • 4 pieces chicken breasts Boneless and skinless preferred
  • 1 cup crumbled feta cheese
  • 1/4 cup hot honey Adjust for desired heat level
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh parsley for garnish Adds color and freshness

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a mixing bowl, combine crumbled feta cheese, hot honey, minced garlic, olive oil, salt, and pepper. Stir until well mixed.
  3. Place chicken breasts in a baking dish, spaced slightly apart.
  4. Pour the feta mixture over the chicken breasts, covering them generously.
Cooking
  1. Place the baking dish in the oven and bake for 25-30 minutes, until chicken is cooked through and reaches an internal temperature of 165°F (74°C). The feta mix should be bubbly and slightly golden.
  2. Remove from the oven and let it rest for a few minutes. Garnish with fresh parsley before serving.

Notes

For extra flavor, consider adding sliced vegetables underneath the chicken for roasting. Can swap chicken for thighs or use different kinds of cheese.
