  • 1/4 cup honey Adds sweetness
  • 2-3 units chipotle peppers in adobo sauce, chopped Adjust for desired spiciness

  • 2 tablespoons lime juice Adds acidity and balance

Method
 

Preparation
  1. In a mixing bowl, combine the honey, chopped chipotle peppers, olive oil, minced garlic, lime juice, salt, and pepper. Stir well to create a marinade.
  2. Place the chicken breasts in a shallow dish and pour the marinade over them. Ensure the chicken is thoroughly coated. Cover and marinate for at least 30 minutes, or up to 2 hours.
Cooking
  1. Preheat your grill to medium-high heat. If using an indoor grill or skillet, heat it over medium-high.
  2. Remove the chicken from the marinade, letting excess drip off. Place the chicken on the grill and cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).
  3. Once cooked, remove the chicken from the grill and let it rest for about 5 minutes before slicing.
Serving
  1. Slice the chicken and serve with your choice of sides, garnishing with fresh cilantro if desired.

Notes

Try adding fresh orange juice to the marinade for extra flavor. Grilled veggies can be served alongside.
