Ingredients

  • 2 cups cooked chicken, shredded Use leftover or rotisserie chicken for convenience.
  • 4 cups chicken broth Homemade or store-bought.
  • 1 cup mixed vegetables (carrots, peas, etc.) Adjust vegetables to your preference.
For the Dumplings
  • 1 cup all-purpose flour You can use gluten-free flour if needed.
  • 1 teaspoon baking powder Ensure it's fresh for best results.
  • 1/2 teaspoon salt
  • 1/2 cup milk Use whole, almond, or your preferred milk.
  • 1/4 cup butter, melted Can substitute with olive oil.

  • Salt and pepper to taste

Method
 

Preparation
  1. In a large pot over medium heat, bring the chicken broth to a simmer. Add the shredded chicken and mixed vegetables, cooking for about 5 minutes.
  2. In a mixing bowl, combine the flour, baking powder, and salt. Stir in the melted butter and milk until just mixed; do not overmix.
Cooking Dumplings
  1. Drop spoonfuls of the dumpling mixture into the simmering broth without overcrowding the pot.
  2. Cover the pot tightly and cook for 15-20 minutes without lifting the lid.
  3. Check the dumplings with a toothpick after 20 minutes; they should come out clean.
  4. Season with salt and pepper to taste, then serve hot.

Notes

Consider adding fresh herbs like thyme or parsley for enhanced flavor. For a creamier broth, stir in milk or heavy cream before serving. Store leftovers in an airtight container; they can be kept in the fridge for up to 3 days or frozen for 3 months.
