Preparation
  1. Begin by cooking the penne pasta according to the package instructions. Once cooked, drain the pasta and set it aside.
  2. In a large skillet, heat a drizzle of olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until they become fragrant and the onion turns translucent.
Cooking
  1. Add the ground beef to the skillet, breaking it up as it cooks. Continue cooking until the beef is browned through, about 5-7 minutes.
  2. Stir in the diced tomatoes with their juices, low-sodium beef broth, Greek yogurt, grated Parmesan, Italian seasoning, salt, and pepper. Bring the mixture to a gentle simmer, allowing the flavors to meld together for a few minutes.
  3. Carefully add the drained pasta to the skillet, tossing everything together until the pasta is well-coated with the creamy beef mixture.
