  • 2 large cucumbers, diced
  • 1/4 cup green onions, sliced
  • 1/4 cup fresh herbs (like cilantro or parsley), chopped
  • 1/2 cup Greek yogurt
  • 2 limes Juice of 2 limes
  • Salt and pepper to taste

Method
 

Preparation
  1. In a large bowl, mix together the diced cucumbers, sliced green onions, and chopped herbs. Be sure to use fresh herbs for maximum flavor.
  2. In another bowl, whisk together the Greek yogurt, lime juice, salt, and pepper until well combined.
  3. Add the cleaned shrimp to the vegetable mixture and ensure the shrimp are evenly distributed.
  4. Pour the dressing over the shrimp and vegetable mixture. Toss gently to coat all ingredients without breaking the shrimp.
  5. Refrigerate the salad for at least 30 minutes to allow flavors to meld and for the dish to be served cold.

Notes

This salad is best served chilled. Pair it with whole-grain crackers for a light lunch or serve it as a side dish during a barbecue. Can be modified with additional ingredients like diced bell peppers or jalapeƱos for an extra kick.
