Ingredients
  

Protein
  • 2 pieces Chicken breast Seasoned with salt, pepper, and garlic.
Grains
  • 1 cup Quinoa Rinsed and cooked according to package instructions.
Vegetables
  • 2 cups Spinach Fresh, chopped.
  • 1 cup Cherry tomatoes Halved.
  • 1 piece Avocado Diced.
Dressings and Seasonings
  • 2 tablespoons Olive oil For drizzling over the salad.
  • 2 tablespoons Lemon juice Freshly squeezed.
  • 2 cloves Garlic Minced.
  • to taste Salt For seasoning.
  • to taste Pepper For seasoning.

Method
 

Preparation
  1. Rinse the quinoa under cold water, then cook according to package instructions until fluffy, about 15 minutes.
  2. Season chicken breasts with salt, pepper, and minced garlic.
Cooking Chicken
  1. Grill or pan-fry chicken over medium heat until cooked through, approximately 6-7 minutes on each side, depending on thickness.
Assembly
  1. In a large bowl, combine cooked quinoa, chopped spinach, cherry tomatoes, and diced avocado.
  2. Drizzle with olive oil and lemon juice, then toss gently to combine.
  3. Place a portion of the quinoa salad on a plate or in a container and top with sliced chicken breast.

Notes

For longer storage, consider freezing portioned bowls. Let cooked food cool completely before refrigerating.
