  • 1 pound ground beef Use lean or regular ground beef.
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can diced tomatoes 14.5 oz can recommended.
  • 2 cups cooked rice or pasta Choose based on preference.
  • 1 cup shredded cheese Cheddar, mozzarella, or pepper jack can be used.
  • to taste salt
  • to taste pepper
  • optional bell peppers, mushrooms, or other vegetables Additional veggies can be added based on preference.

  1. In a large skillet, heat a little oil over medium heat.
  2. Add the chopped onion and garlic, sauté until soft and fragrant.
  3. Add the ground beef to the skillet, breaking it apart, and cook until browned. Drain any excess fat.
  4. Stir in the diced tomatoes and your choice of additional vegetables, then let it simmer for 5 to 10 minutes to meld the flavors.
  5. Mix in the cooked rice or pasta, ensuring it is well coated in the beef mixture.
  6. Season with salt and pepper to taste, stirring to combine.
  7. Finally, sprinkle cheese on top of the mixture and cover until melted.
  8. Serve hot and enjoy a hearty meal.

Notes

Store any uneaten portions in an airtight container in the refrigerator for up to three days or freeze for up to three months. When reheating, warm gently on the stovetop.
