  • 1 cup onion, chopped Use yellow or white onions.
  • 2 cloves garlic, minced Fresh garlic is recommended for better flavor.
  • 1 can diced tomatoes Use unsalted tomatoes for fewer sodium levels.
  • 2 cups cooked rice White or brown rice can be used.
  • 1 cup shredded cheese Cheddar or mozzarella works well.
  • 1 tsp Italian seasoning Substitute with fresh herbs for more flavor.
  • to taste Salt and pepper Season to your preference.

Preparation
  1. Begin by heating a skillet over medium heat and adding the ground beef. Cook until browned, breaking apart with a spatula.
  2. Once browned, add the chopped onion and minced garlic. Sauté until the onion becomes translucent, around 5 minutes.
  3. Stir in the diced tomatoes and Italian seasoning. Simmer for about 5 minutes.
  4. Mix in the cooked rice, seasoning with salt and pepper according to your taste.
  5. Transfer mixture to a baking dish, spreading it evenly. Top with shredded cheese and bake in a preheated oven at 350°F (175°C) for about 20 minutes.

Notes

For a one-pot meal, cook everything in the skillet without baking. Leftovers can be stored in an airtight container in the fridge for up to three days or frozen for three months.
