Ingredients
  

Meat and Broth
  • 1 pound ground beef Choose lean ground beef for a healthier option.
  • 1 cup beef broth May substitute with vegetable broth for a vegetarian option.
Vegetables
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 can diced tomatoes (15 oz) Drained.
  • 1 can tomato sauce (15 oz)
  • 1 cup chopped bell peppers
  • 1 cup corn (optional) Can be omitted.
Seasonings
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon Italian seasoning

Method
 

Preparation
  1. Brown the ground beef in a skillet over medium heat, breaking it up as it cooks. Drain excess fat.
  2. Transfer the cooked ground beef to the crockpot.
  3. Add chopped onion, minced garlic, diced tomatoes, tomato sauce, beef broth, salt, black pepper, Italian seasoning, chopped bell peppers, and corn (if using) into the crockpot.
  4. Stir all ingredients thoroughly to combine.
Cooking
  1. Cover the crockpot and cook on low for 6-8 hours, or on high for 3-4 hours.
Serving
  1. Serve hot over rice, in tortillas, or with bread.

Notes

For a richer flavor, allow the dish to cook longer. You can customize by adding seasonal vegetables or grains.
