  • 1 pound ground beef
  • 1 cup uncooked rice
  • 14.5 ounces can diced tomatoes approximately
  • 1 cup beef broth
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup shredded cheese optional

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, cook the ground beef over medium heat along with the chopped onion and minced garlic until the meat is browned, about 5-7 minutes.
  3. Drain any excess fat from the skillet to lighten the dish.
  4. Stir in the uncooked rice, diced tomatoes (with their juice), beef broth, salt, and pepper.
  5. Bring the mixture to a boil, then reduce the heat to low, cover the skillet, and let it simmer for about 20 minutes, or until the rice is tender and has absorbed the flavors.
  6. Transfer the mixture to a greased casserole dish and sprinkle shredded cheese on top if desired.
  7. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and the dish is bubbling.
  8. Allow it to cool for a few minutes before serving.

Notes

For variations, you can add veggies like bell peppers, use ground turkey or chicken instead of beef, or spice it up with cumin or paprika. You can also make it creamy by adding sour cream or cream of mushroom soup.
