Ingredients

Main Ingredients
  • 4 pieces chicken breasts Skinless and boneless preferred for even cooking.
  • 2 tablespoons olive oil Can be substituted with avocado oil or canola oil.
  • 1 teaspoon garlic powder Adds flavor to the marinade.
  • 1 teaspoon paprika For a smoky taste.
  • to taste none Salt and pepper Adjust according to preference.
  • 1 cup cherry tomatoes, halved Adds a sweet and juicy element.
  • 1 cup corn kernels Fresh or frozen corn can be used.
  • to taste none Fresh basil for garnish Adds freshness to the dish.

Method

Preparation
  1. Preheat the grill to medium-high heat. This helps in achieving that perfect sear.
  2. In a bowl, mix the olive oil, garlic powder, paprika, salt, and pepper to create a marinade.
  3. Coat the chicken breasts with the olive oil mixture, ensuring they are evenly covered.
Cooking
  1. Grill the chicken for about 6-7 minutes on each side or until fully cooked. The juices should run clear, and it should no longer be pink inside.
  2. During the last few minutes of cooking, add the cherry tomatoes and corn to the grill to soften slightly and absorb drippings.
Serving
  1. Once cooked, remove from the grill and let the chicken rest for a few minutes to keep it juicy.
  2. Garnish with fresh basil before serving.

Notes

For extra flavor, marinate the chicken for a few hours or overnight. Feel free to experiment with different vegetables or herbs.
