For the vegetables
  • 1 medium zucchini Cut into bite-sized pieces.
  • 1 piece bell pepper (red or yellow) Cut into bite-sized pieces.
  • 1 cup fresh corn (off the cob) Can use canned or frozen as alternatives.

Method
 

Preparation
  1. Preheat the grill to medium-high heat.
  2. In a bowl, marinate the chicken in olive oil, lemon juice, minced garlic, salt, and pepper for at least 30 minutes.
  3. Wash and cut the zucchini and bell pepper into bite-sized pieces. If using corn, slice it off the cob.
  4. Toss the vegetables with a little olive oil, salt, and pepper to enhance their natural flavors.
Cooking
  1. Place the marinated chicken on the grill. Cook for approximately 6 to 7 minutes on each side, or until the internal temperature reaches 165°F.
  2. Grill the vegetables in a grill basket or on skewers until they are tender and have grill marks, roughly 5 to 7 minutes.
  3. Once everything is cooked, remove it from the grill and let it rest for a few minutes.
  4. Garnish chicken and vegetables with fresh herbs before serving.

Notes

For added flavor, marinate the chicken overnight. Vegetable options include asparagus, mushrooms, or cherry tomatoes based on preference.
