Preparation
- Preheat the grill to medium-high heat.
- In a bowl, marinate the chicken in olive oil, lemon juice, minced garlic, salt, and pepper for at least 30 minutes.
- Wash and cut the zucchini and bell pepper into bite-sized pieces. If using corn, slice it off the cob.
- Toss the vegetables with a little olive oil, salt, and pepper to enhance their natural flavors.
Cooking
- Place the marinated chicken on the grill. Cook for approximately 6 to 7 minutes on each side, or until the internal temperature reaches 165°F.
- Grill the vegetables in a grill basket or on skewers until they are tender and have grill marks, roughly 5 to 7 minutes.
- Once everything is cooked, remove it from the grill and let it rest for a few minutes.
- Garnish chicken and vegetables with fresh herbs before serving.
Notes
For added flavor, marinate the chicken overnight. Vegetable options include asparagus, mushrooms, or cherry tomatoes based on preference.
