Preparation
- Preheat your grill to medium-high heat.
- In a bowl, combine olive oil, lemon juice, minced garlic, salt, pepper, and chopped herbs. Add the chicken to the marinade, ensuring it’s well-coated. Allow it to marinate for at least 30 minutes.
- While the chicken is marinating, toss the sliced vegetables in olive oil, salt, and pepper.
Cooking
- Place the marinated chicken on the grill and cook for 6-7 minutes on each side until fully cooked and juices run clear.
- Grill the vegetables for about 5-6 minutes, turning occasionally until tender and slightly charred.
Serving
- Arrange the grilled chicken on a platter with the fresh vegetables. Enjoy your meal hot off the grill!
Notes
Leftover chicken can be used in salads or wraps. For a twist, add soy sauce or honey to the marinade. Can substitute with a grill pan if no outdoor grill is available.
