Ingredients
  

For the Chicken
  • 4 pieces Chicken breasts Boneless and skinless
  • 3 tablespoons Olive oil For marinade
  • 2 tablespoons Lemon juice Freshly squeezed
  • 2 cloves Garlic Minced
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 1/4 cup Chopped herbs (basil, parsley) Mixed
For the Vegetables
  • 2 cups Bell peppers Sliced (variety of colors)
  • 2 cups Zucchini Sliced
  • 1 cup Corn Fresh or frozen, kernels removed
  • 2 tablespoons Olive oil For tossing vegetables
  • 1 teaspoon Salt
  • 1 teaspoon Pepper

Method
 

Preparation
  1. Preheat your grill to medium-high heat.
  2. In a bowl, combine olive oil, lemon juice, minced garlic, salt, pepper, and chopped herbs. Add the chicken to the marinade, ensuring it’s well-coated. Allow it to marinate for at least 30 minutes.
  3. While the chicken is marinating, toss the sliced vegetables in olive oil, salt, and pepper.
Cooking
  1. Place the marinated chicken on the grill and cook for 6-7 minutes on each side until fully cooked and juices run clear.
  2. Grill the vegetables for about 5-6 minutes, turning occasionally until tender and slightly charred.
Serving
  1. Arrange the grilled chicken on a platter with the fresh vegetables. Enjoy your meal hot off the grill!

Notes

Leftover chicken can be used in salads or wraps. For a twist, add soy sauce or honey to the marinade. Can substitute with a grill pan if no outdoor grill is available.
