  • 4 pieces Boneless, skinless chicken breasts Recommended for the recipe
  • 2 cups Fresh vegetables (zucchini, bell peppers, corn) Use any combination of seasonal vegetables
Marinade
  • 2 tablespoons Olive oil For marinating chicken and vegetables
  • 1 tablespoon Lemon juice Freshly squeezed for best flavor
  • 2 cloves Garlic, minced
  • 1 teaspoon Salt
  • 1 teaspoon Pepper Freshly cracked is recommended
  • 1/4 cup Fresh herbs (basil, parsley, or thyme), chopped Adjust according to personal taste

Method
 

Preparation
  1. Preheat the grill to medium-high heat ensuring it’s ready for cooking.
  2. In a bowl, marinate the chicken pieces in olive oil, lemon juice, minced garlic, salt, pepper, and chopped herbs for at least 30 minutes.
  3. While the chicken marinates, prepare the vegetables by washing and cutting the zucchini, bell peppers, and corn. Toss these with olive oil, salt, and pepper to coat evenly.
Cooking
  1. Place the marinated chicken on the grill and cook for about 6-7 minutes on each side until it reaches a safe internal temperature and is fully cooked through.
  2. Add the prepared vegetables to the grill, cooking until they are tender and slightly charred.
Serving
  1. Serve the grilled chicken alongside the colorful vegetables on a plate.

Notes

You can adapt the dish by switching out vegetables according to what's in season. Marinade the chicken overnight for deeper flavor.
