  • 4 pieces Grilled chicken Use boneless, skinless chicken breasts.
  • 6 cups Mixed greens Any combination of lettuce, spinach, or arugula.
  • 1 cup Cherry tomatoes Halved.
  • 1 cup Cucumbers Sliced.
  • 1 piece Avocado Diced.
  • 2 tablespoons Olive oil
  • 1 tablespoon Lemon juice

Method
 

Preparation
  1. Preheat the grill to medium-high heat.
  2. Season the chicken with olive oil, salt, and pepper for extra flavor.
  3. Grill the chicken for 6-7 minutes on each side until fully cooked.
  4. While the chicken cooks, prepare a large bowl by combining mixed greens, halved cherry tomatoes, sliced cucumbers, and diced avocado.
  5. Once the chicken is done, slice it into strips and add it to the salad mixture.
  6. Drizzle the salad with olive oil and a squeeze of lemon juice before tossing gently and serving.

Notes

For added flavor, marinate the chicken in lemon juice, garlic, and herbs for at least an hour before grilling. This salad pairs well with whole grain bread or pita for a heartier meal.
