Main ingredients
  • 4 pieces Chicken breasts (boneless) Use lean chicken breasts for a healthier option.
  • 2 pieces Bell peppers (any color) Cut into bite-sized chunks.
  • 2 pieces Zucchini Slice into bite-sized pieces.
  • 2 ears Corn on the cob Remove husks and silk.
Marinade ingredients
  • 2 tablespoons Olive oil (extra virgin) Provides flavor and helps keep chicken moist.
  • 1 teaspoon Salt To taste.
  • 1 teaspoon Black pepper To taste.
  • 1 teaspoon Garlic powder Adds depth of flavor.
  • 2 tablespoons Lemon juice Fresh lemon juice preferred for brightness.

Method
 

Preparation
  1. Preheat the grill to medium-high heat, about 375 to 400 degrees Fahrenheit.
  2. In a bowl, combine olive oil, salt, black pepper, garlic powder, and lemon juice to create the marinade. Coat the chicken breasts with this marinade and let them marinate for at least 30 minutes.
  3. Cut the bell peppers and zucchini into bite-sized chunks for even cooking. Remove the husks and silk from the corn.
Grilling
  1. Thread the marinated chicken, bell peppers, zucchini, and corn onto skewers. If using wooden skewers, soak them in water for about 30 minutes beforehand to prevent burning.
  2. Place the skewers on the preheated grill and grill for about 15-20 minutes, turning occasionally until the chicken is cooked through and reaches an internal temperature of 165 degrees Fahrenheit, and the vegetables are nicely charred.
Serving
  1. Remove the skewers from the grill and let them rest for a few minutes before serving to retain moisture.

Notes

Consider experimenting with different marinades and adding more vegetables like mushrooms or asparagus. Use a grill basket for smaller items.
