  • 1 tablespoon olive oil For seasoning the chicken

For the Salad
  • 1 cup corn Cooked or fresh
  • 1 cup cherry tomatoes Halved
  • 1 cup cucumbers Diced
  • 1 cup bell peppers Chopped
  • 2 tablespoons olive oil For dressing the salad
  • 2 tablespoons lemon juice For dressing the salad
  • 1 teaspoon salt To taste
  • 1 teaspoon pepper To taste

Method
 

Preparation
  1. Preheat the grill to medium-high heat to prepare for cooking the chicken.
  2. Season the chicken generously with salt, pepper, and a drizzle of olive oil to enhance its flavor.
Cooking
  1. Grill the chicken for about 6-7 minutes on each side, ensuring it's cooked through and has a beautiful char.
  2. While the chicken is grilling, chop the corn, tomatoes, cucumbers, and bell peppers into bite-sized pieces.
Assembly
  1. In a large bowl, combine the chopped vegetables with a splash of olive oil, lemon juice, salt, and pepper to taste. Toss gently to mix.
  2. Once the chicken is done, let it rest for a couple of minutes before slicing. Serve the grilled chicken alongside the fresh summer vegetable salad.

Notes
