  • 4 pieces Chicken breasts
  • 2 cups Green chilies (fresh or canned)
  • 1 medium Onion finely chopped
  • 2 cloves Garlic minced
  • 1 cup Chicken broth
  • 1 teaspoon Cumin
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper
  • 2 tablespoons Olive oil
  • 1 cup Cheese (optional, for topping) such as Monterey Jack or pepper jack

Method
 

Preparation
  1. Heat olive oil in a large skillet over medium heat.
  2. Add finely chopped onion and minced garlic and sauté until the onion becomes soft and translucent, about 3-4 minutes.
  3. Add chicken breasts to the skillet. Cook for about 5-7 minutes on each side until browned and cooked through.
  4. Stir in chopped green chilies, cumin, salt, and pepper. Mix well to ensure chicken is coated with spices.
  5. Pour in chicken broth and bring mixture to a gentle simmer.
  6. Allow chicken to simmer in the broth for around 20 minutes, or until liquid has reduced slightly and chicken is fully cooked.
  7. Serve hot, and sprinkle cheese on top if desired.

Notes

For a milder flavor, reduce the amount of green chilies or use mild varieties. This recipe is also great for using up rotisserie chicken.
