- Heat olive oil in a large skillet over medium heat.
- Add finely chopped onion and minced garlic and sauté until the onion becomes soft and translucent, about 3-4 minutes.
- Add chicken breasts to the skillet. Cook for about 5-7 minutes on each side until browned and cooked through.
- Stir in chopped green chilies, cumin, salt, and pepper. Mix well to ensure chicken is coated with spices.
- Pour in chicken broth and bring mixture to a gentle simmer.
- Allow chicken to simmer in the broth for around 20 minutes, or until liquid has reduced slightly and chicken is fully cooked.
- Serve hot, and sprinkle cheese on top if desired.
Notes
For a milder flavor, reduce the amount of green chilies or use mild varieties. This recipe is also great for using up rotisserie chicken.
