  • 3 cups cooked shredded chicken
  • 1 cup green enchilada sauce
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 10 pieces corn tortillas
  • 1/2 cup diced onions
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat the olive oil over medium heat. Add the diced onions and minced garlic, and sauté until they become translucent and fragrant.
  3. In a bowl, combine the cooked shredded chicken with half of the green enchilada sauce and half of the shredded cheese, mixing well.
  4. To soften the corn tortillas, wrap them in a damp paper towel and microwave for about 30 seconds.
Assembling
  1. Spoon a portion of the chicken mixture into each tortilla, roll them up tightly, and place them seam-side down in a baking dish.
  2. Pour the remaining green enchilada sauce over the top of the rolled tortillas, ensuring they are well-coated. Sprinkle with the remaining cheese.
Baking
  1. Cover the baking dish with foil and bake in the preheated oven for about 20 minutes.
  2. After 20 minutes, remove the foil and bake for an additional 10 minutes or until the cheese is bubbly and golden.
  3. Once out of the oven, serve immediately, topping with optional garnishes like sour cream, chopped cilantro, or diced avocado.

Notes

Consider adding diced jalapeños or cayenne pepper for spice. You can customize with different proteins or veggies, and these enchiladas can be prepped in advance for meal planning.
