Ingredients
  

For the marinade
  • 2 tablespoons gochujang (Korean chili paste)
  • 1 tablespoon soy sauce
  • 1 tablespoon honey
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 tablespoon rice vinegar

For the chicken
  • 1 lb chicken thighs, boneless and skinless
For garnishing

Method
 

Preparation
  1. In a bowl, combine gochujang, soy sauce, honey, sesame oil, minced garlic, grated ginger, rice vinegar, salt, and pepper to create a flavorful marinade.
  2. Add the chicken thighs to the marinade and ensure they are thoroughly coated. For the best flavor, let the chicken marinate for at least 30 minutes, or overnight if you have the time.
Cooking
  1. Preheat a grill or a skillet over medium-high heat.
  2. Cook the marinated chicken for approximately 6-7 minutes on each side, or until fully cooked and beautifully charred, confirming an internal temperature of 165°F.
  3. Once cooked, remove the chicken from the heat and let it rest for a few minutes to keep it juicy.
  4. Slice the chicken and serve it decorated with chopped green onions and sesame seeds if desired.

Notes

For a sweeter flavor, increase the amount of honey in the marinade. To make a vegetarian version, substitute the chicken with firm tofu or your choice of vegetables such as bell peppers or zucchini. Serve with pickled vegetables for a refreshing contrast to the spiciness.
