Method
 

Preparation
  1. Preheat the oven to 450°F (232°C).
  2. In a small bowl, mix the minced garlic, rosemary, thyme, olive oil, salt, and pepper to create a paste.
  3. Rub the garlic herb mixture all over the prime rib roast, ensuring it is evenly coated.
  4. Place the roast on a rack in a roasting pan, allowing air to circulate around the meat.
Cooking
  1. Roast in the preheated oven for 20 minutes to develop a beautiful crust.
  2. Reduce the oven temperature to 325°F (163°C) and continue roasting for about 1.5 to 2 hours, or until the internal temperature reaches your desired doneness (medium rare is about 130°F/54°C).
  3. Let the roast rest for 20-30 minutes before carving and serving to allow the juices to redistribute within the meat for optimal flavor.

Notes

Let the meat come to room temperature before cooking for even cooking. Consider variations with different herbs or a spicy kick with red pepper flakes.
