- Heat the oil in a large skillet or wok over medium heat.
- Pour the beaten eggs into the skillet and scramble them until fully cooked, then push to one side of the skillet.
- Add the diced chicken and mixed vegetables to the pan. Stir-fry for about 3-4 minutes until heated through.
- Add the cooked rice to the skillet, along with the soy sauce. Mix all the ingredients together until well combined.
- Season to taste with salt and pepper.
- Cook for an additional 3-5 minutes to ensure everything is heated evenly and flavors meld together.
- Stir in the chopped green onions and serve hot.
