  • 4 pieces chicken breasts
  • 1 cup salsa Feel free to use your favorite type.
  • 1 packet taco seasoning
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup shredded cheese Recommended to use cheddar or a cheese blend.
Optional Serving Ingredients
  • as needed layer rice or tortillas for serving Can be served over rice or in tortillas.

Preparation
  1. Begin by placing the chicken breasts into the slow cooker.
  2. In a separate bowl, mix together the salsa and taco seasoning; pour this mixture over the chicken in the cooker.
  3. Add the black beans and corn on top of the chicken and salsa mixture.
Cooking
  1. Cover with the lid and set your slow cooker to low for 6-8 hours, or high for 3-4 hours, until the chicken is thoroughly cooked.
  2. Once the chicken is cooked, use two forks to shred it directly within the slow cooker, mixing it with the other ingredients.
  3. Stir in the shredded cheese until it melts, adding a creamy finish to the dish.

Notes

For variations, consider using turkey or tofu instead of chicken, or different types of salsa for varied flavors. Add bell peppers or jalapeƱos for extra crunch and spice.
