Ingredients
  

For the Grilled Chicken
  • 4 pieces chicken breasts Marinate before grilling.
  • 3 tablespoons olive oil For marinating.
  • 2 tablespoons lemon juice For marinating.
  • 1 teaspoon salt To taste.
  • 1 teaspoon black pepper To taste.
For the Corn on the Cob
  • 4 ears corn on the cob Fresh, to boil.
For the Tomato Salad
  • 2 cups diced tomatoes Fresh and ripe.
  • 1 cup diced cucumber To add freshness.
  • 1 small diced red onion For flavor.
  • 1 bunch fresh basil Chopped.
  • 2 tablespoons olive oil For drizzling.
  • 1 tablespoon vinegar For dressing.
  • 1 teaspoon salt To taste.
  • 1 teaspoon black pepper To taste.
For the Pasta Salad
  • 2 cups pasta Cooked according to package instructions.
  • 1 cup chopped vegetables Bell peppers and olives recommended.
  • 1 cup dressing of choice
For the Fresh Fruit
  • 4 cups variety of seasonal fruits Watermelon, strawberries, peaches.
For the Lemonade
  • 1 cup freshly squeezed lemon juice Adjust sweetness to taste.
  • 4 cups water To dilute.
  • 1/2 cup sugar Or to taste.

Method
 

Preparation
  1. Combine olive oil, lemon juice, salt, and pepper in a bowl for the chicken marinade.
  2. Marinate chicken breasts for at least 15 minutes.
  3. Preheat grill to medium-high heat.
Cooking
  1. Grill the chicken for about 6-7 minutes per side or until juices run clear.
  2. Bring a large pot of salted water to a boil, add corn and cook for about 8-10 minutes.
  3. Drain corn and serve hot with butter.
Salad Preparation
  1. Combine diced tomatoes, cucumbers, diced red onion, and fresh basil in a bowl.
  2. Drizzle with olive oil and vinegar, toss to coat, and season with salt and pepper.
  3. Prepare pasta salad by cooking pasta, cooling it, and mixing with chopped vegetables and dressing.
  4. Slice up seasonal fruits for dessert.
Beverage Preparation
  1. Combine lemon juice, water, and sugar in a pitcher, stir until dissolved, and serve chilled.
