Preparation
  1. Start by seasoning the chicken breasts with olive oil, salt, and pepper. Allow them to marinate while you prepare the other ingredients.
  2. Preheat your grill over medium heat. Grill the chicken for about 6-7 minutes on each side, or until fully cooked.
  3. In a saucepan, cook the quinoa according to package instructions, usually about 15 minutes, until fluffy.
  4. While the quinoa is cooking, chop fresh vegetables like zucchini, bell peppers, and cherry tomatoes. Toss them in a bowl with olive oil, salt, and a squeeze of lemon juice to brighten the flavors.
  5. Once the chicken is done grilling and the quinoa is cooked, serve the grilled chicken alongside a generous portion of the quinoa and vegetable salad.

Notes

Consider marinating the chicken overnight for added flavor, and feel free to substitute proteins or add nuts/seeds for extra crunch. Store leftovers in airtight containers in the fridge for up to 3 days or freeze for up to 3 months. Reheat gently to maintain moisture.
