  • 4 pieces Chicken breasts Boneless and skinless
  • 2 tablespoons Olive oil For the marinade
  • 2 tablespoons Lemon juice Freshly squeezed for best flavor
  • 3 cloves Garlic Minced
  • 1 teaspoon Salt
  • 1 teaspoon Pepper Freshly ground
For the Vegetables
  • 4 cups Mixed vegetables Can include bell peppers, zucchini, and corn
  • 2 tablespoons Olive oil For tossing vegetables
  • 1 teaspoon Salt
  • 1/4 cup Fresh herbs Like basil or parsley for flavor

Method
 

Preparation
  1. Preheat the grill or oven to medium heat.
  2. In a bowl, mix olive oil, lemon juice, minced garlic, salt, and pepper to create the marinade.
  3. Marinate chicken breasts in the mixture for at least 30 minutes.
  4. Chop mixed vegetables and toss them in olive oil, salt, and your choice of fresh herbs.
Cooking
  1. Grill or bake the marinated chicken for about 6-7 minutes on each side until fully cooked.
  2. Grill or roast the mixed vegetables until tender, which usually takes about 10-15 minutes.
Serving
  1. Serve the chicken alongside the grilled vegetables, garnished with additional fresh herbs.
