  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 14.5 oz can diced tomatoes Include juice
  • 1 cup beef broth
  • 2 cups mixed vegetables (carrots, peas, corn) Fresh or frozen
  • 1 tsp salt
  • 0.5 tsp pepper
  • 1 tsp Italian seasoning

  1. In a large skillet over medium heat, cook the ground beef until it is browned. Break it up with a spatula as it cooks to ensure even browning.
  2. Once the beef is browned, drain any excess fat if necessary. Add the chopped onion and minced garlic to the skillet. Sauté until the onion is softened, about 3 to 5 minutes.
  3. Add the diced tomatoes with their juice and the beef broth to the skillet. Bring this mixture to a gentle simmer.
  4. Incorporate the mixed vegetables, followed by salt, pepper, and Italian seasoning. Stir to combine.
  5. Let the dish simmer for 15 to 20 minutes, stirring occasionally. Serve hot as a standalone meal or over rice, pasta, or bread.

Notes

Consider adding red pepper flakes for heat or topping with cheese before serving. Leftovers can be stored in an airtight container for up to 3-4 days in the fridge or frozen for 2-3 months.
