  • 2 cups cooked chicken, diced Use leftover chicken for convenience.
  • 1 cup dill pickles, diced Choose crunchy dill pickles for best flavor.
  • 1/2 cup mayonnaise Can substitute with Greek yogurt.
  • 1/4 cup Greek yogurt For added creaminess.
  • 1 tablespoon Dijon mustard For a tangy flavor.
  • 1 tablespoon fresh dill, chopped Use fresh for optimal flavor.
  • Salt and pepper to taste Adjust seasoning as desired.

Preparation
  1. In a large mixing bowl, combine the diced cooked chicken and the diced dill pickles.
  2. In a separate bowl, prepare the dressing by mixing together mayonnaise, Greek yogurt, Dijon mustard, and freshly chopped dill.
  3. Pour the dressing over the chicken and pickle mixture, and gently stir to coat everything evenly.
  4. Season with salt and pepper to taste, adjusting based on your preference.
  5. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld.
  6. Serve chilled on a bed of lettuce, as a filling in sandwiches or wraps.

Notes

Can add diced celery or nuts for extra crunch. Great for meal prep; lasts 3-5 days in the fridge. Not suitable for freezing.
