- In a large mixing bowl, combine the diced cooked chicken and the diced dill pickles.
- In a separate bowl, prepare the dressing by mixing together mayonnaise, Greek yogurt, Dijon mustard, and freshly chopped dill.
- Pour the dressing over the chicken and pickle mixture, and gently stir to coat everything evenly.
- Season with salt and pepper to taste, adjusting based on your preference.
- Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld.
- Serve chilled on a bed of lettuce, as a filling in sandwiches or wraps.
Notes
Can add diced celery or nuts for extra crunch. Great for meal prep; lasts 3-5 days in the fridge. Not suitable for freezing.
