Marination

  2. Add coconut milk and tomato paste, stirring to combine.
  3. Stir in dried herbs and optional veggies.
Cooking Together
  1. Return the seared beef to the pot and let the mixture simmer covered for about 45 minutes to 1 hour.
  2. Check the beef for tenderness and adjust seasoning as needed.
Final Touches
  1. If desired, thicken the sauce with a cornstarch slurry.
  2. Remove the bay leaf before serving and let the dish rest for 5 minutes.
