  • 1/4 cup crumbled feta cheese optional, for creaminess
  • 1/4 cup sliced almonds for crunch
Dressing Ingredients
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar

Preparation
  1. Wash the dandelion greens thoroughly under running water to remove any dirt or grit. Pat them dry with a paper towel. If some stems are particularly tough, trim them off.
  2. In a large bowl, add the cleaned dandelion greens, sliced radishes, crumbled feta cheese, and sliced almonds. Toss gently to mix the ingredients.
Dressing
  1. In a small bowl, whisk together the olive oil and balsamic vinegar. Season with salt and pepper to taste.
Assembly
  1. Drizzle the dressing over the salad mixture in the bowl. Toss gently to ensure all the ingredients are coated evenly with the dressing.
  2. Serve immediately for the best flavor and texture.

Consider adding grilled chicken, chickpeas, or roasted tofu for protein. Feel free to experiment with different dressings and vegetables.
