  • 2 lbs chicken breasts Use boneless, skinless chicken breasts.
  • 1 cup teriyaki sauce Store-bought or homemade can be used.
  • 2 cloves garlic, minced Adds flavor to the sauce.
  • 1 tablespoon ginger, minced Fresh ginger is preferred.
  • 1/2 cup pineapple chunks (optional) Enhances sweetness; can be omitted.
  • to taste Salt and pepper For seasoning the chicken.

Preparation
  1. Place the chicken breasts at the bottom of the crockpot.
  2. Season the chicken with a little salt and pepper.
  3. In a bowl, combine the teriyaki sauce, minced garlic, minced ginger, and optional pineapple chunks. Stir well.
  4. Pour the sauce mixture over the chicken breasts.
Cooking
  1. Set your crockpot on low for 6-8 hours or on high for 3-4 hours.
  2. Once cooked, shred the chicken directly in the crockpot using two forks.
  3. Mix the shredded chicken back into the sauce before serving.

Notes

This dish can be customized with added vegetables or spice adjustments. Great for meal prep because the flavors develop over time. Store leftovers in the fridge or freezer.
