  • 2 lbs chicken breasts Boneless and skinless preferred
  • 1 packet ranch seasoning Any brand will work
  • 8 oz cream cheese Regular or low-fat
  • 1 cup shredded cheddar cheese Can substitute with pepper jack for heat
  • 4 strips bacon Cooked and crumbled for topping
  • Green onions, chopped For garnish

Method
 

Preparation
  1. Begin by placing the chicken breasts in the bottom of your crockpot.
  2. Sprinkle the ranch seasoning evenly over the chicken, ensuring each piece is well-coated.
  3. Add the cream cheese on top of the seasoned chicken.
Cooking
  1. Cover the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours.
  2. Once cooked, use two forks to shred the chicken in the crockpot.
  3. Stir in the shredded cheddar cheese until melted and combined.
Serving
  1. Top the dish with crumbled bacon and fresh, chopped green onions before serving.

Notes

Can be served over rice, in sandwiches, or alongside veggies. Store leftovers in an airtight container; refrigerate for 3-4 days or freeze for up to 3 months.
