  • 4 pieces chicken thighs, skinless and boneless
  • 1 cup chicken broth
  • 1 piece onion, sliced
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Optional: vegetables such as carrots and potatoes, chopped

Method
 

Preparation
  1. Begin by placing the chicken thighs into the bottom of your crockpot. Ensure they are evenly distributed for optimal cooking.
  2. Layer the sliced onions and minced garlic over the chicken.
  3. Pour the chicken broth over the chicken and vegetables, then sprinkle on the paprika, thyme, salt, and pepper.
  4. If using additional vegetables, add them on top now.
  5. Cover and set your crockpot on low for 6-8 hours or high for 3-4 hours.
  6. Once cooked, serve hot over rice, quinoa, or with a side of crusty bread.

Notes

For extra flavor, marinate the chicken thighs the night before. Feel free to experiment with spices like cumin or Italian seasoning. To thicken the sauce, turn the crockpot to high after removing the chicken and add a cornstarch slurry.
