  • 1 piece onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup carrots, sliced
  • 1 cup potatoes, diced

Preparation
  1. Begin by placing the chicken thighs at the bottom of the crockpot, skin-side up for optimal browning.
  2. Add the chicken broth, chopped onion, and minced garlic to the crockpot.
  3. Sprinkle in the paprika, salt, and black pepper, ensuring the chicken is well-seasoned.
  4. Layer the sliced carrots and diced potatoes on top of the chicken.
  5. Cover the crockpot and cook on low for 6-7 hours or on high for approximately 4 hours until chicken is fully cooked and vegetables are tender.
  6. Garnish with fresh herbs before serving for added color and freshness.

Notes

You can customize with your favorite herbs and spices. Leftovers can be stored in an airtight container for 3-4 days or frozen for up to 3 months.
