  • 1.5 lbs chicken breast or thighs
  • 4 cups chicken broth
  • 1 cup carrots, chopped
  • 1 cup celery, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • to taste Salt and pepper
  • 1 cup frozen peas

Method
 

Preparation
  1. Begin by placing the chicken in the bottom of the crockpot.
  2. Pour in the chicken broth to cover the chicken completely.
  3. Next, add in the chopped carrots, celery, onion, garlic, thyme, and parsley. Sprinkle a touch of salt and pepper over the mix.
  4. Cover the crockpot and set it to cook on low for 6-8 hours or on high for 4-5 hours.
Finishing
  1. About 30 minutes before serving, open the lid and shred the chicken into bite-sized pieces using two forks. Stir the chicken back into the broth.
  2. Finally, add in the frozen peas, give it a good stir, and allow it to cook for an additional 30 minutes.

Notes

For added depth, sauté the onions and garlic before adding them to the crockpot. Feel free to incorporate other vegetables like green beans or corn. Experiment with different herbs or spices, such as rosemary or a dash of red pepper flakes.
