Main ingredients
  • 4 pieces boneless, skinless chicken breasts Arrange in a single layer
  • 2 cups chicken broth
  • 1 can cream of chicken soup
  • 1 medium onion, chopped
  • 2 cups carrots, sliced
  • 2 cups egg noodles Can substitute with other noodles if desired

Method
 

Preparation
  1. Place the chicken breasts in the crockpot in a single layer.
  2. Add the chicken broth, cream of chicken soup, chopped onion, and sliced carrots over the chicken. Season with salt and pepper.
Cooking
  1. Set the crockpot to cook on low for 6-7 hours or on high for approximately 4 hours, until the chicken is cooked through and tender.
  2. Once the chicken is cooked, carefully remove it from the crockpot and shred it using two forks.
  3. Return the shredded chicken back into the crockpot, mixing it with the broth and vegetables.
  4. Add the egg noodles to the crockpot and stir them into the mixture.
  5. Cook on high for an additional 30 minutes or until the noodles are tender and fully cooked.
  6. Stir well before serving and garnish with parsley if desired.

Notes

For variations, consider adding garlic, other vegetables, or gluten-free noodles. Store leftovers in an airtight container in the fridge for 3-4 days or freeze for 2-3 months.
