Preparation
- Place the chicken breasts in the crockpot in a single layer.
- Add the chicken broth, cream of chicken soup, chopped onion, and sliced carrots over the chicken. Season with salt and pepper.
Cooking
- Set the crockpot to cook on low for 6-7 hours or on high for approximately 4 hours, until the chicken is cooked through and tender.
- Once the chicken is cooked, carefully remove it from the crockpot and shred it using two forks.
- Return the shredded chicken back into the crockpot, mixing it with the broth and vegetables.
- Add the egg noodles to the crockpot and stir them into the mixture.
- Cook on high for an additional 30 minutes or until the noodles are tender and fully cooked.
- Stir well before serving and garnish with parsley if desired.
Notes
For variations, consider adding garlic, other vegetables, or gluten-free noodles. Store leftovers in an airtight container in the fridge for 3-4 days or freeze for 2-3 months.
