  • 4 pieces chicken thighs Bone-in for more flavor recommended.
  • 1 cup chicken broth Can substitute with vegetable broth or water.
Spices
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt and pepper To taste.
Optional Vegetables
  • chopped vegetables (carrots, potatoes, bell peppers, etc.) Feel free to use your favorite seasonal produce.

Preparation
  1. Place chicken thighs in the crock pot, spaced evenly.
  2. Pour chicken broth over the thighs.
  3. Sprinkle garlic powder, onion powder, paprika, salt, and pepper on top.
  4. If using, add the chopped vegetables around the chicken.
Cooking
  1. Cover and cook on low for 6-8 hours or on high for 3-4 hours until chicken is cooked through and tender.

Notes

For added flavor, consider using bone-in chicken thighs, fresh herbs at the end, or citrus for brightness. This dish can be served alone, with sides, in sandwiches, or over grains like quinoa.
