Ingredients
  

For the Chicken
  • 4 pieces chicken pieces (legs or thighs)
  • 1 cup buttermilk Can substitute with regular milk mixed with vinegar.
For the Coating
  • 1 cup all-purpose flour Can be substituted with gluten-free flour blend.
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Oil for frying Oil for frying Heat to 350°F (175°C).

Method
 

Preparation
  1. Marinate the chicken by placing the pieces in a bowl and covering them with buttermilk. Allow them to marinate for at least 1 hour.
  2. In a separate bowl, mix together the flour, paprika, garlic powder, onion powder, salt, and black pepper.
Cooking
  1. Heat oil in a deep skillet to about 350°F (175°C).
  2. Remove chicken pieces from buttermilk, allow excess to drip off, and dredge them in the flour mixture until well coated.
  3. Carefully place the coated chicken in the hot oil. Fry for about 12-15 minutes, turning occasionally, until the chicken is golden brown and cooked through.
  4. Transfer the chicken to a plate lined with paper towels to absorb excess oil and let it rest for a few minutes before serving.

Notes

For extra crunch, double dip the chicken in buttermilk and flour mixture before frying. Serve with classic sides like coleslaw or in fried chicken sandwiches.
