  • 2 pieces chicken breasts boneless and skinless
  • 2 tablespoons olive oil for cooking
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 cup spinach fresh, chopped
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Grated Parmesan cheese for garnish

Preparation
  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Season both sides of the chicken breasts with salt and pepper, then place them in the skillet.
  3. Cook until browned and cooked through, about 7-8 minutes per side. Remove from skillet and set aside.
Sauce
  1. In the same skillet, lower the heat and add minced garlic. Sauté for about 30 seconds until fragrant.
  2. Slowly pour in the chicken broth and heavy cream, stirring to combine.
  3. Add sun-dried tomatoes, spinach, and Italian seasoning. Stir and let simmer for a few minutes until spinach wilts and sauce thickens.
Combine
  1. Return the chicken to the skillet, coating it well in the creamy sauce. Simmer for an additional 2-3 minutes.
  2. Serve hot, garnished with freshly grated Parmesan cheese.
