  • 3-4 lbs corned beef brisket
  • 1 large onion, quartered
  • 4 cloves garlic, smashed
  • 4 cups water
  • 2 tablespoons pickling spice
  • 3-4 medium carrots, cut into chunks
  • 4-5 medium potatoes, cut into chunks
  • 1-2 leaves bay leaves

Method
 

Preparation
  1. Rinse the corned beef brisket under cold water to remove any excess salt.
  2. Place the brisket in a large pot or slow cooker.
  3. Add the onion, garlic, pickling spice, and bay leaves.
  4. Pour in enough water to cover the brisket completely.
Cooking
  1. Bring the mixture to a boil, then reduce heat and let it simmer for 2.5 to 3 hours, or until fork-tender.
  2. If using a slow cooker, set it on low for 8 to 10 hours.
  3. During the last 30-40 minutes of cooking, add the carrots and potatoes.
  4. Once done, slice the corned beef against the grain and serve with the vegetables.

Notes

For enhancements, try searing the brisket before simmering and experiment with spices. Leftovers can be used in sandwiches, salads, or breakfast hash.
