  • 4 cups Mixed greens (such as spinach, arugula, or lettuce)
  • 1 cup Cherry tomatoes (halved)
  • 1 cup Cucumber (diced)
  • 1/2 medium Red onion (thinly sliced)
  • 1/2 cup Feta cheese (crumbled)
Dressing Ingredients
  • 1/4 cup Olive oil
  • 2 tablespoons Balsamic vinegar
  • to taste Salt and pepper

Method
 

Preparation
  1. Wash and dry the mixed greens thoroughly. Place them in a large salad bowl.
  2. Add the halved cherry tomatoes, diced cucumber, and thinly sliced red onion.
  3. Crumble feta cheese over the top of the assembled salad.
  4. In a separate small bowl, whisk together olive oil and balsamic vinegar. Season with salt and pepper to taste.
  5. Pour the dressing over the salad mixture and gently toss to combine, ensuring the salad is well coated.
  6. Serve immediately to enjoy the freshness.
