  • 4 cups chicken broth Low sodium optional
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 teaspoon dried thyme Can substitute with fresh thyme

Method
 

Preparation
  1. In a large pot, add the whole chicken and cover it with chicken broth.
  2. Add the diced carrots, diced celery, and chopped onion to the pot.
  3. Season the mixture generously with salt, pepper, and dried thyme.
Cooking
  1. Bring the pot to a boil, then reduce the heat and let it simmer for about 1 hour, or until the chicken is fully cooked.
  2. Remove the chicken from the pot, shred the meat into bite-sized pieces, and return it to the broth.
  3. Taste and adjust the seasoning if needed, then serve hot.

Notes

For added flavor, consider adding fresh herbs like parsley or dill. You can include noodles or rice in the last few minutes of cooking for a heartier soup. Leftover rotisserie chicken can save time while still delivering a hearty dish.
