  • 2 cups toppings (lettuce, cheese, salsa, and sour cream) Assorted toppings to suit guests.
For Guacamole
  • 3 pieces ripe avocados Must be ripe for best flavor.
  • 2 tbsp lime juice Freshly squeezed preferred.
  • 1 cup diced onions To taste.
  • 1 cup diced tomatoes To taste.
  • 0.5 cup chopped cilantro Fresh for best results.
For Salsa
  • 2 cups fresh tomatoes, diced Choose ripe tomatoes.
  • 1 cup diced onions To taste.
  • 0.5 cup cilantro, chopped Optional jalapeños can be added.
  • 2 tbsp lime juice Freshly squeezed for the best flavor.
  • 1 tsp salt To taste.
For Quesadillas
  • 4 pieces flour tortillas For optimal texture.
  • 2 cups shredded cheese Cheddar or Monterey Jack recommended.
  • 1 cup optional vegetables or meats Grilled chicken or sautéed peppers can work.
For Mexican Street Corn
  • 4 pieces fresh corn on the cob Use young and fresh ears.
  • 0.5 cup mayonnaise Can substitute with Greek yogurt.
  • 0.5 cup cotija cheese, crumbled A salty cheese that enhances flavor.
  • 1 tbsp chili powder Adjust for spice preference.
  • 2 tbsp lime juice Adds freshness.
For Margaritas
  • 4 oz lime juice Fresh limes recommended.
  • 2 oz simple syrup Alternatively, use agave syrup.

Method
 

Preparation
  1. Prepare your choice of protein by cooking and seasoning beef, chicken, or beans with taco seasoning.
  2. Mash ripe avocados in a bowl for guacamole and mix with lime juice, salt, diced tomatoes, onions, and cilantro.
  3. Prepare salsa by dicing tomatoes and onions, chopping cilantro, and mixing all ingredients with lime juice and salt.
Cooking
  1. Place tortilla chips in a bowl and serve alongside both guacamole and salsa.
  2. For quesadillas, layer shredded cheese and additional fillings between two tortillas. Cook on a skillet over medium heat until cheese is melted. Slice into wedges for serving.
  3. Grill fresh corn on the cob until charred, then spread mayonnaise and sprinkle with cotija cheese, chili powder, and lime juice.
Serving
  1. Combine lime juice and simple syrup in a shaker with ice, shake well, and strain into glasses, adding optional fruit purees.
