  • 1 1/4 cups orange segments (mandarin, clementine, or tangerine) Fresh segments are preferred.
  • 1/2 cup pomegranate seeds (or dried cranberries) Adds color and sweetness.
  • 1/2 cup crumbled feta cheese Can substitute with goat cheese or omit for dairy-free.
  • 1/2 cup candied pecans, roughly chopped Adds sweetness and crunch.
For the Dressing
  • 1/3 cup olive oil Provides healthy fats.
  • 1 tablespoon honey Natural sweetener.
  • 2 teaspoons Dijon mustard Adds tanginess.
  • 2 tablespoons apple cider vinegar For acidity.
  • 1 tablespoon minced shallot Optional for flavor.
  • Salt and pepper to taste Adjust according to preference.

Preparation
  1. In a large bowl, combine the mixed spring greens, orange segments, pomegranate seeds, feta cheese, and candied pecans. Toss gently to mix.
  2. In a small bowl, whisk together the olive oil, honey, Dijon mustard, apple cider vinegar, minced shallot, and a pinch of salt and pepper until smooth.
  3. Drizzle the dressing over the salad and toss gently to coat all the ingredients evenly.
  4. Serve the salad right away to enjoy the freshness of the ingredients or keep the dressing separate until serving to prevent wilting.

Notes

Consider adding grilled chicken or chickpeas for added protein, or making it vegan by omitting cheese. Store leftovers in an airtight container for up to 2 days.
