Preparation
- Preheat your oven to 350°F (175°C). Grease and line three 8-inch round cake pans.
- In a large mixing bowl, whisk together flour, cocoa powder, sugar, baking powder, baking soda, and salt.
- Add eggs, milk, vegetable oil, and vanilla. Mix on medium speed until smooth, about 2 minutes.
- Carefully stir in hot coffee. Divide the batter evenly among the pans.
- Bake for 25 to 30 minutes, until a toothpick inserted comes out clean. Let cool in pans for 10 minutes before transferring to wire racks.
Orange Filling
- In a saucepan over medium heat, whisk together sugar, cornstarch, and egg yolks. Gradually mix in orange juice.
- Cook while stirring until thickened and bubbly, then stir in orange zest and butter. Allow to cool completely.
Ganache
- Heat cream in a saucepan until steaming. Pour over chopped dark chocolate and let sit for 2 minutes.
- Stir until smooth, adding butter for a rich glaze. Let cool slightly.
Assembly
- Place one layer of cake on a serving plate. Spread orange filling on top.
- Repeat with the second layer of cake and filling. Place the third cake layer on top.
- Pour ganache over the cake, allowing it to cascade down the sides.
- Garnish with fresh orange slices or candied orange peel before serving.
