  • 4 pieces chicken breasts Boneless, skinless chicken breasts recommended
  • 4 medium potatoes, diced Any variety works, such as Yukon gold or russet
  • 2 cups green beans, trimmed Fresh or frozen can be used
Seasonings
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme Substitute with fresh thyme if available
  • to taste salt and pepper

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, toss the chicken breasts with olive oil, garlic powder, thyme, salt, and pepper.
  3. Arrange the seasoned chicken breasts on a baking sheet.
  4. In the same bowl, toss the diced potatoes and trimmed green beans with any remaining oil and seasoning.
  5. Spread the potatoes and green beans around the chicken on the baking sheet.
Cooking
  1. Bake for 25-30 minutes, or until the chicken is cooked through (internal temperature should reach 165°F) and the vegetables are tender.
  2. Serve warm and enjoy!

Notes

For added flavor, consider incorporating fresh herbs, using different vegetables, or adding a glaze during the last moments of cooking. This dish can be meal prepped and stored for later use.
