Preparation
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, combine the shredded chicken, black beans, corn, diced tomatoes with green chilies, and the taco seasoning. Mix well until all ingredients are well incorporated.
- Take a greased casserole dish and layer half of the tortilla chips evenly across the bottom.
- Next, spread half of the chicken mixture over the tortilla chips.
- Follow with half of the cheese and half of the sour cream.
- Repeat the layers with the remaining ingredients, finishing with a layer of cheese on the top.
Baking
- Place the casserole in the preheated oven and bake for 25-30 minutes, or until the cheese is melted and bubbly.
- Once done, garnish with chopped green onions and cilantro if desired, before serving.
Notes
