  • 2 cups cooked chicken, shredded
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 2 cups tortilla chips
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1 cup sour cream
  • 1/2 cup chopped green onions (optional)
  • 1/4 cup chopped cilantro (optional)

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the shredded chicken, black beans, corn, diced tomatoes with green chilies, and the taco seasoning. Mix well until all ingredients are well incorporated.
  3. Take a greased casserole dish and layer half of the tortilla chips evenly across the bottom.
  4. Next, spread half of the chicken mixture over the tortilla chips.
  5. Follow with half of the cheese and half of the sour cream.
  6. Repeat the layers with the remaining ingredients, finishing with a layer of cheese on the top.
Baking
  1. Place the casserole in the preheated oven and bake for 25-30 minutes, or until the cheese is melted and bubbly.
  2. Once done, garnish with chopped green onions and cilantro if desired, before serving.

Notes

To elevate the experience, consider substituting proteins, adding heat with jalapeños, or using different cheeses. This dish holds up well in the fridge and freezer, making it great for meal prep.
