Main Ingredients
  • 2 lbs chicken (boneless, skinless thighs or breasts)
  • 4 cups chicken broth
  • 3 pieces carrots (sliced)
  • 3 pieces potatoes (diced)
  • 1 piece onion (chopped)
  • 2 cloves garlic (minced)
  • 1 cup green beans (trimmed and chopped)
Seasonings
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • to taste Salt
  • to taste Pepper

Method
 

Preparation
  1. Place the boneless, skinless chicken thighs or breasts at the bottom of your crockpot.
  2. Add the sliced carrots, diced potatoes, chopped onion, minced garlic, and chopped green beans on top of the chicken.
  3. Pour the chicken broth over the chicken and vegetables.
  4. Sprinkle the thyme, rosemary, salt, and pepper throughout the mixture.
  5. Gently stir to combine all the ingredients.
Cooking
  1. Cover the crockpot and set it on low for 6-8 hours or on high for 4-5 hours, until the chicken is tender and easily shreds.
Serving
  1. Once the cooking time is up, serve the stew warm, garnished with additional herbs if desired.

Notes

Feel free to customize with other vegetables or spices. Leftovers taste even better the next day.
