Preparation
- Heat olive oil in a skillet over medium heat.
- Season the chicken breasts with salt and pepper, then cook in the skillet for 6-7 minutes on each side until fully cooked.
- Remove chicken from the skillet and set aside.
- In the same skillet, add minced garlic and sauté for 1 minute until fragrant.
Cooking
- Add fresh spinach to the skillet and cook until wilted, stirring occasionally.
- Pour in cream (or chicken broth) and stir to combine with the spinach.
- Grate Parmesan cheese into the mixture and let it simmer for a couple of minutes, allowing the flavors to meld.
- Return the chicken to the skillet and generously coat it with the creamy spinach sauce.
- Serve hot, garnished with additional Parmesan or fresh herbs if desired.
Notes
For added flavor, consider marinating the chicken in herbs and spices, and experiment with leafy green substitutions or lightening the dish as desired.
